Best Ever Quiche Lorraine

1/2 lb. bacon
1/2 c. chopped onion
3 large eggs, beaten
1 1/2 c. cream
salt and pepper
1 lb. Gruyere cheese grated
cayenne pepper
nutmeg
ready to make pie shell

Preheat oven to 450. Cook bacon, crumble and set aside. Saute onions in just a bit of bacon drippings. Cook untill tender, 5 minutes or so. Mix eggs, cream salt and cheese gently (not much or quiche will be tough). Stir in bacon and onion. Season with cayenne (just a bit). Add some nutmeg. Place mixture in pie. Distribute cheese evenly. Sprinkle top with more nutmeg, Bake at 450 for 10 minutes then reduce heat to 325 for 20 minutes.

Witches' Brew Soup

5 strips bacon
3 lbs. ground beef
2 cups chopped onion
2 cans spaghetti with sauce
1 can stewed tomatoes
2 cans kidney beans
2 cups mushrooms
2 garlic cloves diced
1 cup diced celery
1 tablespoon Worcestershire sauce
3 tablespoons catsup
2 boxes Swanson beef broth
4 cups water
salt and pepper

Brown bacon in large stockpot, drain the fat, add beefcook for 10 minutes: drain, Add onions, mushrooms, garlic and celery, cooking untill limp. Add remaining ingredients; simmer 30 minutes.

(you do not have to use the bacon and can use ground turkey instead of ground beef)

Banana Cake

1 box yellow cake mix
3/4  cup orange juice
4 eggs
1 banana
1 box banana pudding

Mix all ingredients on high
Pour into Pam sprayed Bunt pan

Cook 350 for 45 minutes  

Turn out and sprinkle with powered sugar

Huevos Rancheros

3 Tbsp chopped onion
2 Tbsp. chopped green peppers
2 Tbsp. butter
1/2 lb. chopped cooked beef
salt and pepper
1/8 tsp. paprika
1 Tbsp. chopped garlic
5 eggs
oil for cooking


Saute inions, peppers and garlic in butter untill tender.
Mix in meet and seasonings. Let simmer, covered.
In a bowl, beat eggs and pour into hot oiled skillet, then add the meat mixture evenly over the eggs. Brown both sides.

Serve with salsa, avocados and warm. buttered corn or flour tortillas.

Sweet Potato Soup

2 tsp. butter
1/2 c. sliced carrots
1/2 sliced celery
1 large can chopped tomatoes
1 box Swanson beef broth
1 1/2 lbs. sweet potatoes, peeled and thinly sliced
pepper
low fat yogurt, for garnish

In a large saucepan, melt butter, add carrots and celery, saute for 5 min. stirring often. Do not brown. Add tomatoes and cook for 5 more min. Add broth and sweet potatoes. Bring to a boil, reduce heat, cover and simmer for 25 min. Puree. Add pepper and serve with yogurt.

Leeks Au Gratin

8 medium leeks
2 c, milk
1 sliced onion
1 bay leaf
salt and pepper
pinch of nutmeg
4 Tbsp. butter
5 Tbsp. flour
1/2 cup grated Gruyere or Swiss cheese
melted butter

Trim leeks, discarding the green tops and split then twice lengthwise almost to the root and wash thoroughly. Cook them in boiling water for 12 minutes. Make sauce by melting butter, adding flour and cooking 2 minutes. Bring milk to a boil with the onion, bay leaf, salt, pepper, nutmeg, discarding the bay leaf afterwards. Add milk to sauce all at once and stir untill it is very thick.
Spoon a little into a Pam sprayed shallow baking dish. Cut leeks 2 1/2-inch lengths, arrange them on top of sauce and coat with the remaining sauce. Sprinkle with cheese and dribble on melted butter. Bake at 425 for 15 minutes.

Deep Dish Hamburger Pie

1 and 1/2 lb. hamburger meat
2 cups bisquick
2/3 c. milk
1 chopped onion
1 cup broccoli
1 cup spaghetti sauce
1 chopped garlic clove
salt and pepper

Cook hamburger; drain. Add onion, garlic, broccoli and 1/2 sauce; simmer 5 minutes. In bowl, mix milk and bisquick, knead a little and flatten to fit 13 x 9 pan.

Spray pan with Pam and spread dough evenly in. Spread remaining sauce on dough. Evenly pour meat mixture over dough. Sprinkle with cheese. Bake at 400 degrees for 25 minutes.

Zucchini Pie (Ty you may use any cheese you have)

3 large zucchini fried in olive oil and garlic- salt and pepper
store bought ready to make pie crust
5 eggs
shredded Colby and Monterey Jack cheese 2 c,

spray pie pan with pam add fried zucchini tons of cheese then pour beated eggs over the pie

bake in preheated 350 oven for 35 min

Smoothie

1 large babana
2 cups frozen bluberries
soy milk

in blender add banana and frozen blueberries add enough soy milk to cover all
blend on high

Great Northern Beans and Ham Hock

1 bag great northern beans
3 hamhocks
1 large onion cut in bite size
chicken stock 2 Swanson boxes

Add all to crock pot cook on high for 6 hours
