Best Ever Quiche Lorraine

1/2 lb. bacon
1/2 c. chopped onion
3 large eggs, beaten
1 1/2 c. cream
salt and pepper
1 lb. Gruyere cheese grated
cayenne pepper
nutmeg
ready to make pie shell

Preheat oven to 450. Cook bacon, crumble and set aside. Saute onions in just a bit of bacon drippings. Cook untill tender, 5 minutes or so. Mix eggs, cream salt and cheese gently (not much or quiche will be tough). Stir in bacon and onion. Season with cayenne (just a bit). Add some nutmeg. Place mixture in pie. Distribute cheese evenly. Sprinkle top with more nutmeg, Bake at 450 for 10 minutes then reduce heat to 325 for 20 minutes.

Witches' Brew Soup

5 strips bacon
3 lbs. ground beef
2 cups chopped onion
2 cans spaghetti with sauce
1 can stewed tomatoes
2 cans kidney beans
2 cups mushrooms
2 garlic cloves diced
1 cup diced celery
1 tablespoon Worcestershire sauce
3 tablespoons catsup
2 boxes Swanson beef broth
4 cups water
salt and pepper

Brown bacon in large stockpot, drain the fat, add beefcook for 10 minutes: drain, Add onions, mushrooms, garlic and celery, cooking untill limp. Add remaining ingredients; simmer 30 minutes.

(you do not have to use the bacon and can use ground turkey instead of ground beef)

Banana Cake

1 box yellow cake mix
3/4  cup orange juice
4 eggs
1 banana
1 box banana pudding

Mix all ingredients on high
Pour into Pam sprayed Bunt pan

Cook 350 for 45 minutes  

Turn out and sprinkle with powered sugar

Huevos Rancheros

3 Tbsp chopped onion
2 Tbsp. chopped green peppers
2 Tbsp. butter
1/2 lb. chopped cooked beef
salt and pepper
1/8 tsp. paprika
1 Tbsp. chopped garlic
5 eggs
oil for cooking


Saute inions, peppers and garlic in butter untill tender.
Mix in meet and seasonings. Let simmer, covered.
In a bowl, beat eggs and pour into hot oiled skillet, then add the meat mixture evenly over the eggs. Brown both sides.

Serve with salsa, avocados and warm. buttered corn or flour tortillas.
