Leeks Au Gratin

8 medium leeks
2 c, milk
1 sliced onion
1 bay leaf
salt and pepper
pinch of nutmeg
4 Tbsp. butter
5 Tbsp. flour
1/2 cup grated Gruyere or Swiss cheese
melted butter

Trim leeks, discarding the green tops and split then twice lengthwise almost to the root and wash thoroughly. Cook them in boiling water for 12 minutes. Make sauce by melting butter, adding flour and cooking 2 minutes. Bring milk to a boil with the onion, bay leaf, salt, pepper, nutmeg, discarding the bay leaf afterwards. Add milk to sauce all at once and stir untill it is very thick.
Spoon a little into a Pam sprayed shallow baking dish. Cut leeks 2 1/2-inch lengths, arrange them on top of sauce and coat with the remaining sauce. Sprinkle with cheese and dribble on melted butter. Bake at 425 for 15 minutes.
